Baked Fish with Cherry Tomatoes, Olives & Basil - by BBB trainer Amy Adamson

4 x 150g white fish fillets
1 punnet of cherry tomatoes, halved
8 pitted olives, roughly chopped
½ cup basil, roughly chopped
1 clove garlic, chopped
Drizzle of olive oil
Salt and pepper
1 bunch broccolini
1 bunch asparagus

•    Preheat oven to 180°C
•    Place fish, cherry tomatoes, olives, basil and garlic in a baking dish
•    Drizzle with olive oil, salt and pepper
•    Bake for 15min or until fish is cooked through
•    Steam broccolini and asparagus
•    Serve fish with the lovely pan juices and steamed greens
•    Garnish with a squeeze of lemon
