1 cup yellow split peas, soaked overnight
2 tsp coconut oil
½ onion, finely chopped
1 clove garlic, finely chopped
1cm ginger, finely grated
Pinch of ground coriander, ground cumin, turmeric, garam masala
1 small sweet potato, peeled and finely chopped
1 carrot, peeled and finely chopped
1 cup vegetable stock
1 cup coconut milk
1 zucchini finely chopped
½ cup frozen peas
1 cup kale, chopped
½ bunch coriander, chopped
• Heat coconut oil in saucepan over low hear
• Add onion, ginger and garlic and cook 2-3 minutes
• Add spices and cook for another min
• Add split peas, sweet potato, carrot, stock and coconut milk
• Cover and cook for 25min
• Add zucchini, peas and kale
• Simmer uncovered for another 15min or until vegetables are very tender
• Remove from heat and stir through coriander
• Enjoy
